
The 2025 KNUST Food Festival highlighted the need to preserve Ghana’s indigenous foods amid the growing preference for fast food among the youth. Food scientists from Kwame Nkrumah University of Science and Technology (KNUST) warned that junk foods contribute to rising cases of obesity, type 2 diabetes, and cardiovascular diseases.
Held under the theme “Innovation and Technological Advancement in Mindful Bites: Nourishing the Body and Mind,” the event emphasized the role of innovation in making local dishes more appealing. Experts like Professor Felix Nyarko Engmann stressed the importance of using research and technology to enhance food processing, urging private sector investment in food science.
The festival brought together students, food industry players, and researchers, providing a platform to showcase innovative food products. KNUST’s Pro-Vice Chancellor, Professor David Asamoah, encouraged mindful eating, while Professor Faustina Wireko Manu called for public education on
